James began his culinary journey in 2003, training under Master Chef Henry Kung. A pivotal gift during his apprenticeship—a VHS tape on Itomae-style sushi—remains a cherished keepsake.
In 2011, James opened Sushi Ko, quickly becoming a neighborhood favorite, earning praise from Newsday and Restaurant Hunter. After 14 successful years, the team decided to relocate and pursue a new vision.
The new space elevates the dining experience with a refined atmosphere and an expanded drink menu featuring curated cocktails, mocktails, sakes, Japanese whiskies, and craft beers.
